Health Benefits of Sourdough

Eating sourdough has many potential health benefits. It is rich in vitamins and minerals, and is a great source for antioxidants. In general sourdough is much easier for your body to absorb than traditional white bread because it is lower in gluten. That does not mean it is gluten free. According to webmd.com, "sourdough bread acts as a prebiotic which means that the fiber in the bread helps feed tin your intestines". Feeding the good bacteria maintains digestive health.

Sourdough is not an enriched dough, meaning no sugar or fat has been added. This can help stabilize blood sugar levels. Sourdough is also rich in nutrients like folate, potassium, and magnesium. On a non-scientific personal level, I also find that sourdough keeps me satiated longer than an enriched dough like white bread.
